SOYAMATE BRIYANI


Soyamate Briyani

Ingredients / Bahan- Bahan yang diperlukan : 


Basmati Rice/ Beras Basmati                1kg
Enrico's Soyamate/Soyamate Enrico's   250gm
Fennel Seed/ Jintan Manis                    10 gms both / 10 gram kedua - duanya          
Cumin Seed / Jintan Putih                       10 gms fried & powdered / 10 gram digoreng & dikisar
Briyani Masala/ Briyani Masala             50 gram
Chilly powder/ Serbuk Cili                     10 gram
Cinnamon/ Kayu Manis                         2 small pieces / 2 biji kecil
Cardamon/ Buah Pelaga                        5 pcs (crushed)/ 5 biji (dihancurkan)
Cloves/ Bunga Cengkik                         5 -6 pcs/ 5 - 6 biji
Big onion/ Bawang Besar                      1 kg
Tomato/ Tomato                                    4 (each cut into 4 pcs / setiap satu dipotong 4 )
Green chilly/ Cabai Hijau                       5 (cut & split) (dibelah)
Enrico's Ghee/ Minyak Sapi Enrico's      200gms
Turmeric powder / Serbuk Kunyit          10 gram
Ginger & garlic paste/                             2 tablespoon/ 2 sudu besar
Campuran Bawang putih dan halia yang digiling 
Mint leaf/ Daun Pudina                           50 gram (chopped/ dipotong)
Corriander leaf/ Daun Pudina                 25 gram (chopped/ dipotong)
Salt to taste / Garam secukup rasa

METHOD



  1. Soak Enrico's Soyamate  in warm water for 3o mins. Then squeeze out water dry. - Rendam Soyamate dalam air suam selama 30 minit kemudian perahkan kesemua airnya.
  2. Wash and soak basmati rice for 30 mins and then drain the water. -                              Basuh beras basmati dan rendamkannya selama 30 minit, kemudian alirkan keluar airnya.
  3. Saute Enrico's Soyamate with 100gms Enrico's Ghee till golden brown and set aside. - Panaskan Soyamate dengan 100gram Minyak Sapi Enrico's sehingga berwarna coklat keemasan dan letak ke tepi.
  4. Using the 50gms of Enrico's Ghee, fry cinnamon, cardamom and cloves and add in the shredded onion and 3 green chilly and fry for 3 minutes.-                                                Dengan 50 gram Minyak sapi Enrico's goreng kayu manis, buah pelaga, bunga cengkik, hirisan bawang dan 3 cabai hijau selama 3 minit. 
  5. Add tomatoes and sufficient amount if water , Briyani Masala, salt, Turmeric powder and the sauted Soyamate.Then, add the previously soaked Basmati Rice and stir well - Kemudian tambahkan tomato air yang cukup, Serbuk Briyani, garam, serbuk kunyit,Soyamate yang telah digoreng terlebih dahulu serta beras Basmati yang telah direndam sambil kacau campuran tersebut.    
  6. When rice is half -cooked, add the 2 green chilly, coriander leaves, mint leaves, chilly powder, 50gms Enrico's Ghee and stir to make rice fluffy. -                                          Apabila beras telah setengah masak, masukkan 2 cabai hijau, daun ketumbar, daun pudina, serbuk cabai and 50gm Minyak Sapi Enrico's sambil kacau lagi supaya nasi menjadi lembut. 
  7. Close the container air-tight and lower the heat. After 10 minutes, rice is cooked and ready. -                                                                                                                                    Tutup periuk supaya kedap udara dan kurangkan api. Selepas 10 minit nasi telah masak dan siap.
  8. Transfer into serving bowl and garnish top with brown onions, fried cashewnuts, chopped coriander leaves and shredded tomatoes.-                                                                   Pindahkan ke mangkuk hidangan dan hiaskan dengan bawang goreng, gajus goreng serta hirisan-hirisan daun ketumbar dan tomato. 
  9. Water for rice is approximately 1 1/2 cups of water to 1 cup of rice. -                                 Air yang mencukupi ialah lebih kurang 1 1/2 cawan air untuk setiap 1 cawan beras.
